Objectives
On completion of this module students should be able to: a) understand the relationships between agricultural suppliers, food processors and retailers in food production; b) discuss the present status of the food industry, food surveillance and the importance of public influence on traditional and new products.Syllabus
Human requirements from food. Review of methods for preservation and conversion of raw food. Topics of public concern in food manufacture. Relationships between agricultural supply, food product manufacture and food retailing. Factors affecting the development of food products. The structure of the food manufacturing and retailing industries.
