Objectives

To introduce the factors influencing sensory perception and food choice, methods of assessment of sensory perception and instrumental analysis of colour and texture, and their significance for product development methodology.

Syllabus

Molecular structure and the sensory perception of taste. Measurement of colour and texture. Methods of subjective assessment and their relationship to objective measurements. Psychology of food choice. Statistical methods relevant to sensory measurement analysis and food product optimisation.
