Objectives
On completion of this module students will be able to:a) establish suitable procedures for monitoring contamination hazards in food manufacturing process;
b) prepare and evaluate a HACCP system; to prepare and evaluate procedures for monitoring quality parameters not covered by HACCP systems;
c) understand the problem solving techniques used in quality management;
d) understand how Total Quality management can be applied in the food supply chain;
e) contribute effectively in quality management meetings.
Syllabus
Monitoring of contamination hazards: techniques for microbiological, physical and chemical contaminants. Analysis of the HACCP system components: requirements for flow diagrams, decision trees for CCPs, monitoring, recording and verification stages. Examples of measurement and monitoring for quality control purposes of food properties by instrumental and non-instrumental methods. Techniques used in quality management: e.g., uses of Pareto charts, fishbone diagrams, brainstorming, quality circles, business excellence models. The implementation and auditing of an ISO9000 system. Evaluating a quality assurance system in a role-playing exercise.
