A BSc degree in chemistry, biochemistry, biological sciences or related science, or chemical engineering, or appropriate food science/technology qualification.Module replaces

Objectives
On completion of this module students will be able to:a) understand how food legislation is enacted and enforced, in the UK and internationally
b) appreciate the contribution that the food scientist can make in the development of food legislation
c) participate in, and advise on, decisions of food suppliers and retailers which have legal implications
d) understand the role of other professionals involved in legal matters.
Syllabus
- The structure of food legislation in the UK (primary, secondary, horizontal, vertical).
- Acts, Regulations and Statutory Instruments.
- The Food Safety Act (1990): policy framework and scope, definition of terms, concept of due diligence, procedures for enforcement.
- The role of Enforcement Authorities, Environmental Health Officers, Trading Standard Officers, Public Analysts.
- The form of regulations and SIs. Food Labelling Regulations (1996).
- Significance of case law and review of recent court decisions.
- European law: its structure and its impact on the food industry.
- Impact of legislation on international food production and marketing. Patent law.
- The role of the expert witness.
- Developments in food product authentication.
- Legislative features of Food Standard Agency operations.
