Objectives
On completion of the module, students should be aware of the most recent developments in food process engineering, particularly in colloid science, non-intrusive measurement and control, process intensification and other current topics.Learning outcomes
At the end of the module, students should be able to:
- Understand the underlying scientific and engineering principles associated with the topics introduced;
- Use transferable skills in linking fundamental theories to real-world operations in food processing;
- Use critical reasoning and communication skills to appreciate and disseminate the latest thinking and innovations in the food processing industries.
Syllabus
The module covers the latest advances and thinking in food processing, so the syllabus may be modified in reaction to changes in the industry. Initial topics to be covered include process intensification, non-intrusive measurement techniques for monitoring flowrate, moisture and other critical process parameters, latest trends in process control and automation, colloid engineering and applications in food technology.
