To gain knowledge and understanding of the functions of food and nutrients and their relationship to health and disease.

- Dietary minerals and health
- Functional foods
- Dietary supplements
- Nutrition from an international perspective
- Polyphenols and health
- Antioxidants and their health benefits
- Diabetes, obesity & heart disease
- Appetite control and obesity
- Dietary assessment methods.
