Objectives

On completion of this module you will be better able to:
i. Understand the roles of quality control, quality assurance and quality management systems in controlling the quality and safety of food
ii. Describe instrumental techniques for monitoring food quality and safety;
iii. Outline key issues in food legislation and its implementation in control and management of food quality and safety.

Learning outcomes
On completion of this module you will be better able to:
1. Explain the importance of quality assurance and management systems and the application of quality tools, techniques and standard practices in monitoring and control of the quality and safety of food;
2. Understand the principles of audits and discuss the use of different audit tools in a quality assurance programme;
3. Describe different instrumental techniques and their application in detection, monitoring and the control of food quality and safety problems;
4. Understand how food legislation is enacted and enforced, in the UK and internationally.

Skills outcomes
On completion of this module students will be better able to work as part of a team to solve real world food quality and safety problems.
