Module summary

Have you ever wondered about the truth behind food allergy? Which foods can cause allergic symptoms and even death? Which people can suffer from food allergy and is there anything that can be done to prevent it? How can food allergy be diagnosed? How are the food industry and the government responding to media and public concern over food allergy? The module will also address how to identify allergens and whether GMOs represent a new risk of food allergy.This 10 credit module is taught with lectures throughout semester 1. If you have a background in biological or chemical sciences and are interested in scientific answers to these questions then Food Allergy is an essential module for you. Objectives

On completion of this module, students will understand what food allergens are, how food allergies arise, what the consequences of having an allergy are, how food allergens can be detected and students will understand food labelling regulations with respect to allergens.

Syllabus

How are allergens identified? What are their molecular characteristics? Do GMOs and biotechnology represent a new risk of food allergy? What are 'hidden' allergens? How is the food industry responding to public concern? Can it do more? Can deaths from food allergy be reduced? Is there a 'cure' for food allergy? What are the symptoms? What foods cause it? What happens during an allergic reaction? How is it diagnosed? Who suffers from food allergy? What is there an allergic response?
