Module summary

This 10-credit module will explain the differences between and causes of food allergy and food intolerance.

Objectives

The module aims to introduce students to food allergy and food intolerance as well as irritable bowel syndrome (IBS). Both food allergy and food intolerances are increasing in prevalence, and can also exhibit similar symptoms to IBS. The module will provide an understanding of the causes and symptoms of food allergy and food intolerance as well as information on how allergens can be detected. Finally, students will learn what interventions can improve outcomes for allergy and intolerance.

Learning outcomes
1. To understand the molecular nature of food allergens and food components such as gluten and lactose leading to intolerance
2. To understand the molecular and cellular nature of the allergic response and be able to differentiate food allergy from food intolerance and other similar gastrointestinal disorders.


Syllabus

• What are food allergy, food intolerance and irritable bowel syndrome? How are they diagnosed? How can they be avoided or alleviated?
• How are allergens identified? What are their molecular characteristics? Do GMOs and biotechnology represent a new risk of food allergy? What are 'hidden' allergens?
• How is the food industry responding to public concern? Can deaths from food allergy be reduced? Is there a 'cure' for food allergy? What are the symptoms? What foods cause it?
• What extrinsic factors are involved in IBS?

Opportunities for Formative Feedback

There is no assessed coursework but progress will be monitored throughout the semester using regular in-class polls and quizzes. These are to help students judge whether they are doing enough work outside the lectures or to see if there are any gaps in understanding. The answers to the in class questions will be provided in class and any gaps covered or recovered subsequently.
