Objectives

The aim of the course is to teach students the principles of nutrition including a description of the major nutrients and their digestion in various classes of animals including humans and other mammals, both ruminant and non-ruminant, wild and domestic. Birds are also included.

Learning outcomes
On completion of the module students should have a thorough understanding of the digestive physiology of mammals and birds, including how the major nutrients (carbohydrates, proteins, lipids, vitamins and minerals) are digested and absorbed.

Syllabus

The topics covered are as follows:
- The digestive tracts of ruminants and simple-stomached animals and birds.
- Digestion and absorption of protein, fat and carbohydrates in simple-stomached and ruminant animals.
- The macro-elements, the essential trace elements and the toxic trace elements.
- The fat and water soluble vitamins.
